Lemon madeleines are one of my favorites french cookies. It’s really easy to make them and full of lemon flavor. May I have a cup of tea, please? 🙂
Ingredients for the lemon madeleines recipe (enough for about 20 pieces):
- 1/2 cup all purpose flour
- 1 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/8 teaspoon salt
- 1/2 cup melted butter
- 1/2 cup sugar
- 2 large egg
- zest from one lemon
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon vanilla extract
- 1/4 cup chopped almonds
Preheat oven to 180°C/350°F.
Sift together flour, salt, baking soda and baking powder into a medium bowl.
In a bowl, sift together the dry ingredients: flour, baking powder, baking soda and salt. Set aside.
In a large bowl, beat the eggs with sugar, until creamy. Add in the dry ingredients, than the butter and finally the lemon zest, lemon juice and vanilla extract.
Add the almonds using a spoon.
Bake into a silicone madeleine mold for 10-12 minutes. If you have metallic molds, you need to grease them with butter and dust with flour before baking. I prefer silicone because there is absolutely no sticking, and the cookies come out perfectly.
Cool on a wire rack before serving.
